Our Cover Star Chef Returns After Five Years with L’Atelier De Joël Robuchon
French Chef Joël Robuchon makes a triumphant return to NYC to bring his 12th L’Atelier restaurant to the Meatpacking District as an updated version of his signature restaurant he ran for six years in the Four Seasons hotel. There will be two concepts in L’Atelier de Joël Robuchon: L’Atelier, which serves an a la carte menu and two tasting menus’ and Le Bar, which is a 56-seat dining room that will be offering a separate more casual menu for walk-in customers.
With a total of 31 Michelin Stars, Chef Robuchon has created two nine-course tasting menus for L’Atelier that will include salmon tartar with French Imperial caviar, white truffle risotto with caramelized chicken wings and artichoke carpaccio with foie gras and parmesan priced in the upper $200s. One of these menus will be a vegetarian tasting that will include dishes like beets with apple avocado and green mustard sorbet. As for Le Bar, it will be a more casual experience with a full menu featuring dishes like veal Milanese, roast chicken and a croquet monsieur.
The staff will include Executive Chef Christophe Bellanca, Executive Pastry Chef Salvatore Martone and Head Baker Tetsuya Yamaguchi, all who have been working with the chef for many years. Chef Yamaguchi will lead a team that will make all the pastries and five different types of bread in house.
At 72 years old, Chef Robuchon does not plan on slowing down. He is said to open a new restaurant at 100 East 53rd street which will showcase classic techniques in contemporary dishes.
